The Sun revolves around the Earth. The Earth is flat. Tomatoes are poisonous to humans. What do these three statements have in common? They are all known to be false. At one time, however, these beliefs were universally accepted truths. When the real truth emerged and these old beliefs had to die, many people reacted with resistance.

According to Elizabeth Kubler-Ross, author of On Death and Dying , there are four stages to coming to terms with a death. Psychiatrist Neal Barnard has stated that these stages apply even to ¡®the death of an idea¡¯.

The first stage is denial, the second is anger, the third is bargaining and the fourth is acceptance. Our society is grappling with the burning truth that meat (including poultry and fish), and eggs and dairy are products of cruelty to animals, responsible for ecological devastation and one of the most significant contributors to strokes, heart attacks, atherosclerosis, hypertension, male impotence, urinary diseases, osteoporosis, arthritis, diabetes and cancer.
Some of us have accepted these facts and stopped eating these foods completely. Others are in the stage denial, anger or bargaining.

Denial - The majority of our society is in denial. They know that animals are slaughtered to be turned into bacon, fish sandwiches, or hamburgers, but they prefer to switch off a part of their mind to this suffering. This switching off of the mind is called ¡®psychic numbing¡¯ .

ºÎÀÎ(°ÅºÎ)-¿ì¸® »çȸÀÇ »ó´ç¼ö´Â ºÎÀÎ(°ÅºÎ,°ÅÀý)ÀÇ ´Ü°è¿¡ ÀÖ´Ù. ±×µéÀº µ¿¹°µéÀÌ µµ»ìµÇ¾î º£ÀÌÄÜ,»ý¼±»÷µåÀ§Ä¡,Çܹö°Å µîÀ¸·Î º¯ÇÑ´Ù´Â °ÍÀ» ¾Ë°í ÀÖÀ¸³ª ÀÌ °°Àº °íÅë(µ¿¹°µéÀÌ ´çÇÏ´Â °íÅë)¿¡ ´ëÇØ ¾Ö½á °ü½ÉÀ» ²¨ ¹ö¸®´Â ¹æ½ÄÀ» ±â²¨ÀÌ ÅÃÇÑ´Ù. ÀÌ °°Àº ¡®°ü½É²ô±â¡¯ ´Â ¡®½É¸®Àû ¸¶ºñ »óÅ¡¯·Î ºÒ¸°´Ù.

We all do it in various circumstances. We desensitize ourselves as men to the plight of women. We desensitize ourselves as whites to the plight of people of colour. And we desensitize ourselves as humans to the pain and death we bring to animals.

¿ì¸® ¸ðµÎ´Â ½Ç»ó ¸¹Àº ´Ù¾çÇÑ °æ¿ì¿¡ À־ ±×·¸°Ô ÇÏ°í ÀÖ´Ù. ³²¼ºÀ¸·Î¼­ ¿ì¸®´Â ¿©¼ºµéÀÇ °ï±ÃÇÑ Ã³Áö¿¡ ´ëÇØ ¹«½Å°æÇÏ´Ù. ¹éÀÎÀ¸·Î¼­ ¿ì¸®´Â À¯»öÀεéÀÇ °íÅë¿¡ ¹«°ü½ÉÇÏ´Ù. ±×¸®°í Àΰ£ Á·¼ÓÀ¸·Î¼­ ¿ì¸®´Â µ¿¹°µé¿¡°Ô °¡ÇÏ´Â °íÅëÀ̳ª ±×°ÍµéÀÇ Á×À½¿¡ ´ëÇØ °³ÀÇÄ¡ ¾Ê°í ÀÖ´Ù.

Fundamentally good people go through life in a ¡®consensus trance¡¯, sharing a mass-held belief that goes unquestioned, and when questioned, immediately dismissed.

±âº»ÀûÀ¸·Î ÈǸ¢ÇÑ ½Ã¹ÎÀº ¼ÒÀ§ ¡®°ø°¨´ëÀÇ ¸ô¾Æ»óÅ¡¯ ¼Ó¿¡¼­ ÀÏ»ýÀ» »ì¾Æ°¡¸ç ´ëÁß¿¡ ÀÇÇØ ÀÇ½É ¾øÀÌ ¹Þ¾Æµé¿©Áö´Â ¹ÏÀ½À» °øÀ¯ÇÏ°Ô µÇ´Âµ¥ ¸¸ÀÏ ÀÌ·¯ÇÑ ¹ÏÀ½¿¡ ´ëÇØ ÀǽÉÀÌ Á¦±âµÇ¸é ±× ÀǽÉÀº ´ëºÎºÐÀÇ °æ¿ì Áï°¢ ¹«½ÃµÈ´Ù.

Anger - Sometimes, though, the question comes up again and the ¡®consensus trance¡¯ is shaken. Like being rudely awakened from a deep sleep, anger is a common reaction. Well, that"s how some people ¡®feel¡¯ when a fundamental belief is repeatedly questioned.

They have what they think is truth and don"t want to be confused with facts. Such a person is likely to close off dialogue, ignore messages, etc. If the agent of change persists in questioning the cherished beliefs things could get ugly.

±×µéÀº ±×µé ³ª¸§ÀÇ Áø½ÇÀ̶ó´Â °ÍÀ» °®°í ÀÖÀ¸¸ç À̸¦ °´°üÀûÀÎ »ç½Çµé°ú È¥µ¿Çϱ⸦ ¿øÄ¡ ¾Ê´Â´Ù. ±×·¯ÇÑ »ç¶÷µéÀº ´ëÈ­ÀÇ Åë·Î¸¦ ´Ý¾Æ ¹ö¸®°í ÀÇ¹Ì ÀÖ´Â ¸Þ½ÃÁö¸¦ ¹«½ÃÇÏ´Â µîÀÇ ÇàÀ§¸¦ ÇÒ °ÍÀÌ´Ù. ¸¸ÀÏ º¯È­ÀÇ ¿äÀÎÀÌ ±âÁ¸ÀÇ ¹ÏÀ½¿¡ ´ëÇØ °è¼ÓÇؼ­ ÀǽÉÀ» °®°Ô ¸¸µç´Ù¸é »óȲÀº ¾ÇÈ­µÉ °ÍÀÌ´Ù.

Bargaining - Leonard Cohen sings in his song "Anthem" that "there is a crack in everything", which is how the light gets in. Bargaining is the stage where the crack in our tired old belief system starts to get bigger, and the truth, the light, starts to replace the dark, obsolete thinking.

ŸÇù-Leonard CohenÀº ±×ÀÇ ³ë·¡ Anthem(Âù°¡)¿¡¼­ ¡° ¸ðµç °Í¿¡´Â Æ´ÀÌ ÀÖÀ¸¸ç ±× Æ´ »çÀÌ·Î ÇÞºµÀÌ ½º¸çµé°Ô µÇ´Â °ÍÀÌ´Ù¡± °í ¾Ï½ÃÇß´Ù. ŸÇùÀÇ ´Ü°è´Â ¿ì¸®ÀÇ ³°°í °í·çÇÑ ¹ÏÀ½¿¡ À־ Æ´»õ°¡ Á¡Á¡ ´õ Ä¿Áö±â ½ÃÀÛÇؼ­ Áø½ÇÀÎ ºûÀÌ ¾îµÓ°í ³°Àº »ç»óÀ» ´ëüÇϱ⠽ÃÀÛÇÏ´Â ´Ü°èÀÎ °ÍÀÌ´Ù.

One of the most common examples of bargaining against the idea of giving up animal products is the false statement, once universally touted as truth, that humans need the high quality, complete protein found almost exclusively in eggs, dairy and the flesh of animals.

ŸÇù ´Ü°è¿¡¼­ À°½ÄÀ» Æ÷±âÇÑ´Ù´Â »ý°¢¿¡ ´ëÇ×ÇÏ´Â °¡Àå ÈçÈ÷ ³ªÅ¸³ª´Â ¿¹ Áß Çϳª´Â Àΰ£Àº ÀüÀûÀ¸·Î °è¶õ°ú À¯Á¦Ç° ±×¸®°í µ¿¹°µéÀÇ »ìÄڱ⿡¼­ ¹ß°ßµÇ´Â °íÇ°ÁúÀÇ ¿Ïº®ÇÑ ´Ü¹éÁúÀ» ÇÊ¿ä·Î ÇÑ´Ù°í ÇÏ´Â ÇÑ ¶§´Â º¸ÆíÀûÀÎ Áø½Ç·Î ÅëÇÑ ¹Ù ÀÖ¾ú´ø À߸øµÈ Áø¼úÀ» ¹Ýº¹ÇÏ´Â °ÍÀÌ´Ù.

This myth is used as a shield to hold off complete change, a bargaining chip to obtain a compromise and so continue with their old, slightly modified, habit.

ÀÌ ¹Ì½ÅÀº ä½ÄÁÖÀÇ·Î ½Ä ½À°üÀ» öÀúÇÏ°Ô ÀüȯÇÏ´Â °ÍÀ» º¸·ù½ÃÅ°´Â ÇϳªÀÇ ¹æÆзμ­ ¶Ç´Â ŸÇùÀ» ¾ò¾î³»¸ç ±×µéÀÇ ¿À·¡µÇ°í ¾à°£ º¯ÇüµÈ ½À°üÀ» °è¼Ó À¯ÁöÇØ ³ª°¥ ¼ö ÀÖ´Â Çù»óÀÇ µµ±¸·Î¼­ »ç¿ëµÈ´Ù.

Although it is true we do need to eat foods that contain essential amino acids (E.A.A.), i.e. protein building blocks that cannot be formed in the body, it is not true that only animal products and one or two exceptional plant source foods contain all eight E.A.A."s.

¿ì¸® ¸ðµÎ´Â Çʼö ¾Æ¹Ì³ë»ê(E.A.A)¸¦ ÇÔÀ¯ÇÏ°í ÀÖ´Â ½ÄÇ°µéÀ» (¿¹¸¦ µé¸é ÀÎü ³»¿¡¼­ Çü¼ºµÉ ¼ö ¾ø´Â ´Ü¹éÁú ÇÕ¼º ºí·Ïµé)¼·ÃëÇÒ ÇÊ¿ä°¡ ÀÖ´Â °ÍÀº »ç½ÇÀÌÁö¸¸ µ¿¹°¼º ½ÄÇ° ¹× ÇÑ µÎ °¡Áö ¿¹¿ÜÀûÀÎ ½Ä¹°¼º ½ÄÇ°¸¸ÀÌ ¸ðµç 8°¡Áö E.A.A¸¦ ÇÔÀ¯ÇÏ°í ÀÖ´Ù°í ÇÏ´Â °ÍÀº Ʋ¸° À̾߱âÀÌ´Ù.

The truth is that all foods contain all E.A.A.s. As seen in table 1, Essential Amino Acid Content for Common Foods per Gram of Protein . Even if only some of the information on plant foods is true, it is enough to explode the myth that only animal sources of protein contain all E.A.A."s.

Acceptance - We have to accept that the myth that only animal foods give us the high-quality protein we need is just that -- a myth. The American Dietetic Association (ADA), in their latest position paper on vegetarian diets, writes, "Plant sources of protein alone can provide adequate amounts of essential amino acids if a variety of plant foods are consumed and energy needs are met."

¼ö¿ë-¿ì¸®´Â ´ÜÁö µ¿¹°¼º ½ÄÇ°¸¸ÀÌ ¿ì¸®°¡ ÇÊ¿ä·Î ÇÏ´Â °íÇ°ÁúÀÇ ´Ü¹éÁúÀ» Á¦°øÇØ ÁÙ ¼öÀÖ´Ù´Â ½ÅÈ­´Â ´ÜÁö ¹Ì½Å¿¡ ºÒ°úÇÏ´Ù´Â »ç½ÇÀ» ¹Þ¾Æ µé¿©¾ß¸¸ ÇÑ´Ù. Àü¹Ì ¿µ¾ç¿¬ÇÕ(ADA)´Â ä½Ä¿¡ °üÇÑ ±×µéÀÇ ÃÖ±Ù º¸°í¼­¿¡¼­ ´ÙÀ½°ú °°ÀÌ ±â¼úÇÏ°í ÀÖ´Ù. " ´Ù¾çÇÑ ½Ä¹°¼º ½ÄÇ°À» ¼·ÃëÇÏ°í, ÇÊ¿ä ¿¡³ÊÁö ¼Ò¿ä·®À» ÃæÁ·½ÃŲ´Ù¸é ¿À·ÎÁö ½Ä¹°¼º ´Ü¹éÁú¸¸ÀÌ ÀûÁ¤·®ÀÇ Çʼö ¾Æ¹Ì³ë»êÀ» Á¦°øÇÒ ¼ö ÀÖ´Ù.¡±

We need to get about 10% of our consumed calories in the form of protein. According to data obtained from Nutritive Value of American Foods in Common Units, U.S. Dept. of Agriculture Handbook No. 456, fruits derive about 5% of their calories in the form of protein, but all other foods average about 10% or higher.

¿ì¸®´Â ¿ì¸®°¡ ¼·ÃëÇÏ´Â ¿­·®ÀÇ 10% Á¤µµ¸¦ ´Ü¹éÁúÀÇ ÇüÅ·ΠÃëÇÒ ÇÊ¿ä°¡ ÀÖ´Ù. ¹Ì³ó¹«¼ºÀÌ ¹ß°£ÇÑ ÇÚµåºÏ456ÀÎ ÀϹÝÀû ´ÜÀ§ÀÇ ¹Ì±¹ ½ÄÇ°ÀÇ ¿µ¾ç°¡Ä¡¶ó´Â Ã¥¿¡ ³ª¿À´Â ÀÚ·á¿¡ µû¸£¸é ¿ì¸®´Â °úÀϷκÎÅÍ ¿­·® Áß 5%°¡·®À» ´Ü¹éÁúÀÇ ÇüÅ·ΠÃëÇÏÁö¸¸ ³ª¸ÓÁö ¸ðµç ½ÄÇ°À¸·ÎºÎÅÍ´Â Æò±ÕÀûÀ¸·Î ´ë·« 10% ÀÌ»óÀÇ ¿­·®À» ´Ü¹éÁúÀÇ ÇüÅ·ΠÃëÇÏ°Ô µÈ´Ù.

In regards to complimenting proteins in the same meal, the ADA goes on to write, ¡°Research suggests that complementary proteins do not need to be consumed at the same time..." although they recommend consumption of various foods over the course of the day.

ADA´Â °è¼ÓÇؼ­ ¼­¼úÇϱ⸦ ¡°¿¬±¸Á¶»ç °á°ú¿¡ µû¸£¸é ÇÑ ³¢ÀÇ ½Ä»ç¿¡¼­ ÀÏÀÏ ÇÊ¿ä ´Ü¹éÁú·®À» ÇÑ ¹ø¿¡ ¸ðµÎ ¼·ÃëÇÒ ÇÊ¿ä´Â ¾ø°í ÇÏ·ç Áß ´Ù¾çÇÑ ½ÄÇ°À» ¼·ÃëÇÔÀ¸·Î½á À̸¦ º¸ÃæÇÏ¸é µÈ´Ù¡±°í ÇÑ´Ù.

The vegan (totally plant-based) lifestyle, is healthy as long as one (1) eats a variety of vegan foods each day, (2) eats enough to satiate natural hunger and meet caloric needs, (3) exercises outdoors, and (4) consumes B12 (via nutritional yeast, supplements, or fortified vegan foods).
